My go-to crowd pleaser dressing that's dairy free + nutrient dense! This batch will make enough for your week, or for a salad to feed 20 (it's our go-to catering dressing as well). I love buckwheat as a whole grain option. I recommend my clients reduce grain + starch intake, but we still can enjoy carbs in moderation! This salad is perfect to share, pack for lunch or to use as a comfort food when you are craving bread. Cook buckwheat as you would a regular whole grain, 1 cup grain + 2 cups water. Warning: Addictive. No really. I ate the entire batch in a day and let my kid eat one.
